korean spicy stir-fried pork (제육 볶음 Jeyuk Boggeum) Ingredients (for 2 serving)

 


■ Main Ingredients

- 10oz(300g) pork, I use pork belly, bacon, called Samgyeopsal(삼겹살) in Korea.
- 1tbsp cooking wine (맛술)
- 1/4ts pepper (후추가루)
- 1/4 onion (양파)
- 2oz(60g) cabbage (양배추)
- 1 cayenne chile or cheongryang pepper (청양고추)
- 1 large green onion stem (대파 줄기)
- 4 sesame leaves (깻잎)
■ Spicy Sauce Ingredients
- 1tbsp hot pepper paste (고추장)
- 2tbsp hot pepper powder (고추가루)
- 1/2tbsp minced garlic (다진마늘)
- 1 large green onion root (대파 한뿌리)
- 1/4 onion (양파)
- 1tbsp soy sauce (간장)
- 1tbsp sugar (설탕)
- 1/2tbsp ground sesame seeds (깨소금)
- 1/2tbsp sesame oil (참기름)

HOWTOMAKEJEYUKBOGGEUM

① PREPARE A PORK
- Cut the pork(bacon) into bite-size pieces.
- Put it into a large bowl.
- Add cooking wine, pepper and mix it.
- Set it aside for 30min at room temperature.
② MAKE A MARINADE
- Mince 1 large green onion root.
- Grind a 1/4 onion in a blender.
- Mix hot pepper paste, hot pepper powder, minced garlic, minced large green onion root, ground onion, soy sauce, sugar, ground sesame seeds and sesame oil.
③ MARINATE THE PORK
- Pour the marinade over the pork.
- Mix it well with your hands. Be sure to wear plastic gloves. Or your hands will sting because of the marinade.
- Marinate it over 2 hours in the refrigerator. (I marinate it overnight.)
④ PREPARE THE VEGETABLES
- Chop onion, cabbage, cayenne chile(cheongryang pepper), large green onion and sesame leaves.
⑤ STIR-FRY THE PORK
- Put some oil on frying pan on high heat.
- Put the chopped onion, cabbage and stir it.
- Put the marinated pork and stir it constantly.
- When the pork is almost cooked, add cayenne chile, large green onion, sesame leave and stir it. If the pork is overcooked, the marinade will be burned.
- Season with some salt and stir it.
- Transfer it into a serving plate.
- Sprinkle some sesame seeds
